With From-Scratch Cream Cheese Icing
I am fixin’ to share with you my go-to fall dessert! Fall party? I’m bringing this! Church potluck anywhere from September through Thanksgiving? I’m bringing this! What it is you might ask? Easy, delicious pumpkin bars iced with from-scratch cream cheese icing! These bars are fluffy, moist, and so amazing! The blend of the bar and the cream cheese icing is like a burst of fall in your mouth!
This recipe comes together in about ten minutes and only takes 20 minutes to bake! Add in a bit of time to cool, make your icing, and you can have this delectable fall treat ready in well under an hour, start to finish!
These pumpkin bars are a crowd pleaser, as well! They don’t contain pumpkin pie spice that so many are sensitive to! I recently brought them to an event and someone asked me if they could take home some of the leftovers! Absolutely! Always a good feeling when you know someone loves something you’ve made!
So, let’s get baking! Let’s make some delicious pumpkin bars for your next event or just to enjoy at home! As a bonus, as I love to do whenever possible, I have cleaned up the ingredients. Now, that said, sugar is sugar, and this recipe contains A LOT of sugar, so don’t expect this to necessarily be healthy! We can use clean ingredients though, even when making treats that shouldn’t be a large part of our diet!
Tools for Making Pumpkin Bars
- Mixing Bowl or Two
- Stand OR Hand Mixer
- Measuring Cups and Spoons
- Liquid Measuring Cup
- Spatula
- Cookie Sheet
Ingredients for Pumpkin Bars and Cream Cheese Icing
For the Pumpkin Bars:
- 4 eggs
- 1 cup avocado oil
- 2 cups organic cane sugar
- 1 (15 oz.) can Organic Pumpkin
- 2 cups Organic Flour
- 2 tsp. Organic Cinnamon
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. aluminum-free baking powder
For the Icing
- 12 tsp. Butter (1 1/2 sticks), softened
- 3 cups Organic Powdered Sugar
- 1/2 cup Cream Cheese (about 4 oz.), softened
- 1 tsp. vanilla
Instructions for Making Pumpkin Bars With Cream Cheese Icing
For the Pumpkin Bars
- Pre-heat Oven to 350 degrees.
- Mix together eggs, avocado oil, sugar, and pumpkin in your stand mixer or with a hand mixer.
- Add in the remaining dry ingredients and mix well.
- Pour onto cookie sheet, making sure that the thickness is relatively uniform across the whole pan.
- Bake for 20 minutes and allow to cool for 20 minutes or so while you mix up the icing.
For the Icing
- Combine all ingredients and mix with your stand mixer on medium/high or your hand mixer on high.
- Mix Longer
- Mix Longer- no seriously! This icing takes a while to come together. It will be crumbly and look nothing like creamy icing at first. Keep mixing. Trust the process. As many times as I have made this, I still think I’ve messed it up every time, but I keep mixing and it always comes together, creamy and delicious! Just keep swimming…er…mixing!
- After your bars have had a chance to cool a bit, go ahead and put the icing on, and that’s it! Easy peasy!
