Fall, for many people, signals SOUP SEASON!! Now, I am always up for soup, no matter what time of year it is, but many save these comforting dishes for the cooler fall and winter months! If you are looking for an easy recipe to try, may I recommend this hearty hamburger vegetable soup! Pair with some melty grilled cheese sandwiches and it is the definition of comfort food on a cool fall evening!
Pull Out Your Instant Pot!
I almost always make this recipe in the instant pot, but if you prefer to do it on the stove top, that is perfectly fine! You would just want to continue to simmer until all your potatoes and veggies are tender.
What You’ll Need to Make Hamburger Vegetable Soup
- Instant Pot (or if you don’t plan on using one, a large pot/dutch oven)
- Wooden Spoon
- Measuring Spoons
- Liquid Measuring Cup
- Knife or Chopper
Ingredients For Hamburger Vegetable Soup
- 1 lb grass fed ground beef
- 1 large onion, diced
- 2 cloves of garlic (alternatively, you can use 2 tsp. Organic Minced Garlic)
- 4-5 large potatoes, peeled and diced into bite-sized pieces
- 3 1/2 cups of warm water
- 3 1/2 heaping tsp Organic Beef Better Than Bouillon
- 28 oz Organic Petite Diced Tomatoes, with juice
- 1 (10.75 oz) can condensed tomato soup **Note: I have trouble finding cans of cleaner tomato soup. I typically buy this one and approximately measure how much I need.
- 2 tsp Organic Coconut Aminos
- 1 tsp Italian Seasoning
- 1 Bay Leaf
- Salt and Pepper, just to taste
- 3 cups frozen mixed vegetables
How to Make Hamburger Vegetable Soup
- First, chop your onion and brown your ground beef and onion together in your Instant Pot on the Sauté setting or in a Dutch Oven.
- While the meat is browning, peel and dice up your potatoes.
- Once the meat is browned, drain if needed, and add the garlic and cook for another couple of minutes.
- Next, turn off Instant Pot or pull your Dutch Oven off the burner and add in your potatoes.
- Mix the Better Than Bouillon into the water and add the mixture to the other ingredients.
- If you are doing this on the stove top, you can return it to the burner at this point, medium-high heat.
- Add remaining ingredients and give it a stir.
- Lastly, set your Instant Pot to Pressure Cook for 15 minutes. **Note: If you are doing this on the stove top, just monitor until the potatoes and veggies are tender–probably 20-25 minutes.
- Once the cook time is finished, manually release the pressure and, it is done!
Additional Information and Serving Suggestions
- While you can eat this soup right after making it, we always prefer the flavors on the second day when the flavors have all had a chance to meld perfectly!
- I have tailored the ingredients to be cleaner for our family, but if that is not a priority for you, feel free to use mainstream options for the beef, garlic, tomato soup, etc. You can use 3 1/2 cups of beef broth rather than the water/Better Than Bouillon mixture. You can also use Worcestershire Sauce instead of Coconut Aminos.
- I love to serve this with melty grilled cheese sandwiches, but they would also be delicious served with biscuits or homemade bread topped with butter! (I just might have delicious recipes for those if you click the links ;-))
